Fortuna Cucina Italiana is the latest concept from acclaimed restaurateur Giorgios Bakatsias, whose more than three decades in the culinary industry have established him as one of the Southeast’s most influential and visionary hospitality leaders. As the creative force behind numerous restaurants, markets, and dining concepts, Bakatsias brings a holistic approach to development, from concept and design to guest experience, guided by a keen understanding of evolving dining trends and a commitment to excellence that has earned recognition from both local and national audiences.
Leading the kitchen is Executive Chef and Partner Chris Lewnes, whose culinary perspective is shaped by his Italian American heritage and classical French training. A graduate of the Institute of Culinary Education in New York City, Lewnes refined his technique in several notable kitchens, including the Michelin-starred Bâtard, Augustine at the Beekman Hotel, and as the opening Executive Chef of Sartiano’s at The Mercer Hotel. At Fortuna, he brings a thoughtful and disciplined approach to the menu, drawing on both tradition and technique while highlighting the region’s exceptional seafood and seasonal ingredients.
